Only around 5 to 10 percent of all sparkling wines worldwide are produced according to the
traditional method of bottle fermentation – the same method used for
which gives champagne its incomparable elegance.
The vast majority, however, is fermented in steel tanks –
more efficient, but also easier to express.
In Italy, the proportion of real
“ Método Classico ” sparkling wines are only available at
6 to 7.5 percent .
Our Sparkling Shrimp is therefore part of a small, select minority . While international corporations with enormous budgets dominate the market, we focus on what really lasts: craftsmanship , Experience and patience .
The secret of maturity
An exceptional sparkling wine requires one thing above all: time .
The longer it rests on the yeast, the finer its perlage becomes, the creamier its texture – and the richer its aromas.
Our Sparkling Shrimp matures on the yeast for 24 months .
This extended storage gives it a finest, elegant perlage, a harmonious structure and a remarkable aromatic depth – noticeable from the first sip.
The result is a sparkling wine with character: delicate, fresh and at the same time impressively complex.

We deliberately do not belong to the big names – not to the “ Big Five ” like Moët & Chandon , Veuve Clicquot or Krug .

Our terroir
The home of our Sparkling Shrimp is in Oltrepò Pavese in northern Italy – an area that has been known for its Pinot Noir , the noblest grape variety for the classic Bottle fermentation .
Our grapes thrive in the rolling hills of Montecalvo Versiggia – healthy, ripe and full expression of soil , climate and Origin .
This combination of terroir , craftsmanship and Time shapes the unmistakable character of our sparkling wine – elegant , authentic , Italian .
